We source the very best British spelt, an ancient grain, grown regeneratively on soil that's properly looked after. It gives our pasta a gorgeous, naturally nutty flavour you just don't get from ordinary pasta. Then there's the way we make it. Every joyful shape is bronze-drawn and slow dried the traditional way, which gives it a texture that magically hugs your sauce. Some customers even tell us it feels lighter than regular pasta, but we will let you be the judge of that. It's so good you can eat it naked, with nothing more than a drizzle of olive oil or a knob of butter and a pinch of salt.
